Cheese Stuffed Potatoes

This is potato dish that kids will like too.  Serve two halves if this is the main part of the meal.

bullet4 medium baked potatoes, 5 oz. each (still warm)
bullet1 cup low fat cottage cheese or low fat Ricotta cheese
bullet4 tsp. skim milk
bullet2 Tbl. chopped green onion
bullet1/4 tsp. paprika

Slice each potato in half, lengthwise.  Scoop out pulp, leaving about 1/4 inch thick shells.  Blend cheese, milk, onion.  Add potato and mix until smooth.   Fill potato shell halves with mixture.  Arrange on a baking dish and sprinkle with paprika.

Microwave Method:  Cover with wax paper.  Heat on high for 5 minutes, turning 1/4 turn halfway through cooking.

Conventional Oven:  Preheat oven to 350 degrees.  Bake for 10-15 minutes or until thoroughly heated.

Yield:  8 servings

One serving:  1 potato half

Chicken Fajitas

This a good family recipe.

bullet1 lb. boneless, skinless chicken breasts, cut into 1 inch strips
bullet3 Tbl. lime juice
bullet1/2 tsp. coriander
bullet1/2 tsp. chili powder
bullet1 green pepper, sliced
bullet1 onion, sliced
bullet8 flour tortillas (6 inch size)
bulletsalsa (optional)

Mix lime juice with coriander and chili powder and pour over chicken.  Set aside.   Meanwhile, slice vegetables.  Add to chicken and mix well.  Spray pan with non-stick coating and stir-fry chicken and vegetables until done.  Warm tortillas in microwave about 50 seconds on high or in non-stick skillet.  Fill each tortilla with chicken mixture and serve with salsa.

Yield:  8 filled tortillas (4 servings)

One serving:  2 filled tortillas

Calories per serving:  320
