Oat Bran Muffinsfrom Quick & Healthy Recipes and Ideas, Brenda J. Ponichtera, R.D.These muffins are very moist and a good source of fiber. The tops tend not to brown well due to the low sugar content. You may want to not use paper liners, the muffins have a tendency to stick to the paper.
Preheat oven to 425 degrees. Mix first four ingredients. Set aside. Mix egg with orange juice, milk, and oil. Mix fruit and blend with dry ingredients. Add liquid ingredients and mix just until moistened. Pour into muffin tins that have been sprayed with non-stick coating. Bake for 15-17 minutes.
