Oat Bran Muffins

Oat Bran Muffins

from Quick & Healthy Recipes and Ideas,  Brenda J. Ponichtera, R.D.

These muffins are very moist and a good source of fiber.  The tops tend not to brown well due to the low sugar content.  You may want to not use paper liners, the muffins have a tendency to stick to the paper.

bullet2 1/4 cups oat bran
bullet1/4 cup firmly packed brown sugar
bullet1 1/2 tsp. cinnamon
bullet1 Tbl. baking powder
bullet1 banana, mashed
bullet1 small apple, grated
bullet2 Tbl. dried fruit (raisins, dates, apricots)
bullet1/4 cup egg substitute (equal to 1 egg)
bullet1/2  cup orange juice
bullet3.4 cup skim milk
bullet2 Tbl. oil (canola)

Preheat oven to 425 degrees.  Mix first four ingredients.  Set aside.   Mix egg with orange juice, milk, and oil.  Mix fruit and blend with dry ingredients.  Add liquid ingredients and mix just until moistened.  Pour into muffin tins that have been sprayed with non-stick coating.  Bake for 15-17 minutes.

Yield:  12 muffins

One serving: 1 muffin
